Confession time: I don’t crave fruit very much. I’m more of a veggy gal. So when I was thinking of ways to incorporate more fruit into my diet, this Easy Kiwi Parfait was the perfect vehicle to do just that. It’s made of layers of creamy, dairy-free yogurt, fresh kiwi, and a little gluten-free crunch that comes together in minutes. Fresh, colourful, and SO EASY to make. Whether you like a light dessert, an afternoon snack, or a simple breakfast, this kiwi parfait is a lovely way to enjoy fresh fruit as we head into early fall.

EASY KIWI PARFAIT
What You’ll Need

- 2 fresh kiwis, peeled and thinly sliced (I recommend “golden” kiwis which are sweeter than other varieties)
- 1 cup coconut yogurt or plain almond yogurt
- 1/4 cup gluten-free granola
- 1-2 tablespoons pure maple syrup
- 1/2 teaspoon vanilla extract
- Optional: add slice of strawberry or other garnish on top

HOW TO MAKE A KIWI PARFAIT
Step 1: Make the Vanilla Yogurt
Add the dairy-free yogurt and vanilla extract to a small bowl and stir until combined.
Step 2: Start Layering
Spoon half of the vanilla yogurt into the bottom of a glass or serving bowl.
Add a layer of thinly sliced kiwi (“golden” kiwi will be especially sweet) and sprinkle with gluten-free granola.
Step 3: Repeat Layers
Add most of the remaining yogurt, followed by another layer of fresh kiwi, and granola sprinkles.
Follow this with one last dollop of yogurt and top with granola sprinkles.
TIP: For the best presentation, use a small clear glass so you can see the layers. Don’t have a fancy parfait glass? Small drinking glasses, juice glasses, stemless wine glasses, or small mason jars all work beautifully. Use what you have!
Step 4: Add a Little Sweetness
Drizzle maple syrup over the top just before serving. Optional: add a garnish on top like a strawberry or something with colour.

VARIATIONS & TIPS FOR YOUR KIWI PARFAIT
Make it your own: Adjust the amount of yogurt, kiwi, or granola depending on the size of your serving glass or your preference and taste.

Suggested additions and swaps:
- Add a few fresh berries along with the kiwi.
- Add a sprinkle of chia seeds or hemp hearts for extra texture.
- If you tolerate dairy well, swap the dairy-free yogurt for regular yogurt.
- Skip the vanilla and maple syrup altogether and use a flavoured yogurt instead. (Lemon yogurt, for example, pairs especially well with kiwi).
